Good Morning! I hope everyone is enjoying their weekend so far. We are having another cloudy and grey weekend here, and it’s been raining off and on a little bit too, which is actually a good thing because our trees and grass really need it. The leaves on our trees are just tiny little buds, but I think if we get one good drenching of rain, they’ll finally “pop” and grow out into actual leaves.
Did anyone celebrate Cinco de Mayo yesterday? I personally don’t like to go out to restaurants or bars to celebrate holidays such as Cinco de Mayo, because they’re usually way too crowded for my taste, so I decided to just celebrate at home with taco’s, margarita’s, and these delightful Chocolate Toffee Bars.
One of my favorite candy bars is the Heath toffee bar, and these Chocolate Toffee Bars remind me of them because they are very similar in taste. The bottom crust is like a shortbread cookie, light and crisp, while the top layer is coated with chocolate and studded with toffee bits.
I have a strong feeling that these bars won’t be sticking around very long. ;)
2 cups all-purpose flour
1/2 cup cornstarch
1/2 cup granulated sugar
1/4 teaspoon salt
1 cup cold butter, cut into pieces
2/3 cup Heath English Toffee Bits
2 cups chocolate chips
6 tablespoons butter
1 cup Heath English Toffee Bits
Preheat oven to 325 degrees. Grease and flour a 13 x 9-inch baking pan.
For the crust: In a large bowl, combine flour, cornstarch, sugar and salt. Cut in the butter with a pastry blender until the mixture is crumbly. Gently mix in the toffee bits until evenly distributed. Press mixture into prepared baking pan. Bake for 30-40 minutes, or until lightly browned. Remove from oven and set on a wire rack to cool.
For the chocolate layer: In a microwave-safe bowl, combine chocolate chips and 6 tablespoons butter. Microwave for approximately 60 seconds, until chips are melted. Stir until smooth. Pour chocolate over the crust, and spread until evenly covered. Sprinkle chocolate with 1 cup toffee bits. Set bars aside to let chocolate set and firm. When chocolate has set, cut into squares.
