Oatmeal Chocolate Chip Carrot Cookies

Wish you could sneak a few more veggies into your children’s, or even your own, diet? Well these Oatmeal Chocolate Chip Carrot cookies just might help.

Not only are these cookies packed with 100% whole grain oats, but there’s also a full cup of carrots mixed in.

This recipe makes big, soft cookies that are moist and delicious. And who knows… kids might not even notice the carrots. 😉


Oatmeal Chocolate Chip Carrot Cookies

2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup brown sugar, packed
1/3 cup canola oil
2 eggs
1/3 cup milk
1 cup semi-sweet chocolate chips
1 cup (3 pouches) BetterOats Apples & Cinnamon Instant Oatmeal
1 cup shredded carrots

Preheat oven to 350 degrees. Line cookie sheet with parchment paper.

In a medium bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

In a large bowl, beat brown sugar and oil until blended. Beat in eggs and milk. Gradually add dry ingredients and mix well. Stir in chocolate chips, oatmeal and carrots.

Drop by heaping tablespoonfuls onto cookie sheet. Bake for 10-13 minutes, or until golden brown.

Let cool on cookie sheet for 1 minute, then remove to wire rack to cool.

Makes approximately 2 dozen cookies.

  1. These cookies sound scrumptious! Will any instant oatmeal do, or does it have to be “Better Oats”?

    • Oh, I’m sure you could use any instant oatmeal, Mom. I had a lot of the Better Oats on hand, so that’s what I used. Quaker Instant oatmeal or a similar brand would work just fine though. 😉

    Question: Is it best to use apple flavored instant oatmeal for the apple flavor or would 1 cup of the Quaker quick instant oats work?

    • The Quaker quick instant oats would work just fine in this recipe. I like the taste of apples and carrots together – that’s why I used the apple flavored oatmeal. I also thought about using Quaker High Fiber Instant Maple & Brown Sugar flavored oatmeal, and I may try that next time.
