Vanilla Chai Chocolate Cupcakes

What’s better on a cold, winter day than a hot cup of tea and something sweet to accompany it. 🙂

I really love Chai Tea, so I decided to enhance the flavor of these chocolate cupcakes by steeping 6 Bigelow Vanilla Chai tea bags in the boiling water that this recipe requires.

This resulted in a mild, Chai flavoring. A stronger flavor could be achieved by adding more tea bags to the water.

Vanilla Chai Chocolate Cupcakes

1 3/4 cups all-purpose flour
3/4 cup baking cocoa
1 teaspoon ground cinnamon
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 cups sugar
1/2 cup Lucerne Best of the Egg, Egg Beaters, or other egg substitute (or 2 eggs)
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
6 Bigelow Vanilla Chai tea bags

Heat oven to 350°F. Grease and flour muffin tins, or line with paper baking cups.

Stir together flour, cocoa, cinnamon, baking powder, baking soda and salt in a medium bowl. Set aside.

On medium speed in mixer, beat sugar, egg substitute, milk, oil and vanilla for 2 minutes. Add flour mixture and mix until well combined.

Steep 6 tea bags in boiling water for 3 minutes. Stir boiling water into batter. (batter will be thin).

Fill muffin tins 2/3 full with batter.

Bake for 22 to 25 minutes, or until toothpick inserted in center comes out clean.

Cool completely and frost with Vanilla Butter Cream Frosting, if desired.

Makes approximately 30 cupcakes.

Vanilla Butter Cream Frosting

1 cup butter, room temperature
6 (to 8, if needed) cups powdered sugar
1/2 cup milk
2 teaspoons vanilla extract

Cream butter with a mixer until smooth and creamy. With mixer on low, slowly add 4 cups of sugar, the milk and vanilla until blended well.

Gradually add the remaining sugar, 1 cup at a time, beating well (about 2 minutes) after each addition, until the icing is thick enough for good spreading consistency. (you may not need all of the sugar)
