Eggless Chocolate Cinnamon Cookies

This eggless cookie recipe came in handy today, because I ran out of egg substitute and I didn’t feel like dashing to the store to get some more because it was so cold out today. Our temperatures hovered around 15 degrees below zero for most of the day. Brrrr!!

These cookies are light and airy, and taste almost like a shortbread cookie. They smelled so good while they were baking, and I really welcomed the additional heat that the oven provided to my kitchen. 🙂


Eggless Chocolate Cinnamon Cookies

2 cups flour
2 tablespoons baking powder
1 tablespoon baking cocoa
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
1 cup butter flavored shortening
1/2 cup brown sugar, unpacked
1 cup water
1 teaspoon vanilla extract

Cinnamon Sugar

1/2 cup sugar
1 tablespoon cinnamon

Preheat oven to 425 degrees.

In a medium bowl, mix flour, baking powder, cocoa, cinnamon and salt together. Set aside.

In mixing bowl, cream shortening and brown sugar until smooth.

Alternately add flour mixture and water to mixing bowl. Blend until well combined. Stir in vanilla extract.

Place by rounded teaspoonfuls onto ungreased cookie sheet. Leave about 1-2 inches between cookies.

Bake for 8-10 minutes. Remove from oven and immediately sprinkle with cinnamon sugar mixture, if desired.

Let cool on wire rack.

Makes approximately 3 1/2 dozen cookies.
