This is a very sweet, yet very delicious coffee cake. The sprinkling of brown sugar and cinnamon on top adds a delightful crunch to the cake, and the pudding mix adds wonderful flavor and moistness.
A perfect coffee cake for anyone with a sweet tooth. 🙂
Cinnamon Vanilla Coffee Cake
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 (1 ounce) package Vanilla Jell-O Sugar Free Instant Pudding & Pie Filling
6 tablespoons butter, softened
1/4 cup granulated sugar
1/4 cup brown sugar
1/4 cup Lucerne Best of the Egg, Egg Beaters, or other egg substitute
1/2 teaspoon vanilla
1/2 cup milk
Topping & Filling
1/2 cup brown sugar
1/2 teaspoon cinnamon
Preheat oven to 350 degrees. Grease and flour an 8×8 inch square pan.
In a medium bowl, combine flour, baking powder, baking soda, salt, cinnamon, nutmeg and pudding mix. Set aside.
In mixing bowl, cream butter and sugars. Add egg substitute and vanilla; mix well.
Alternately add flour mixture and milk to butter mixture. Mix until well combined.
Spread half of the batter into prepared baking pan.
Combine topping & filling ingredients. Sprinkle half of brown sugar mixture over batter in pan. Carefully spread remaining batter over brown sugar mixture. Sprinkle remaining brown sugar mixture on top of batter.
Bake for 25-30 minutes, or until toothpick inserted in center comes out clean.
Cool on wire rack.
