Peanut Butter and Jelly Blondies

When I woke up this morning, the temperature was -10 degrees. The local weatherman said that our high for today will be 0 degrees. What better way to spend a cold morning like this, than by baking something yummy. 🙂

I made these Peanut Butter & Jelly Blondie bars using my new Sunbeam MixMaster stand mixer that I received as a Christmas gift this year.
The mixer worked like a charm, and it definitely made today’s baking a lot easier. 🙂

These bars are really delicious, and the jelly swirled into the batter makes them look so pretty. I used a homemade Triple Berry jelly for this recipe, but you can use any flavor jelly that you desire.

Peanut Butter and Jelly Blondies

1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
3/4 teaspoon salt
1/8 teaspoon baking soda
3/4 cup Lucerne Best of the Egg, Egg Beaters, or other egg substitute (or 3 eggs)
1 cup granulated sugar
3/4 cup brown sugar
3/4 cup peanut butter, crunchy or smooth
1 teaspoon vanilla
1/2 cup butter, melted
3/4 cup jelly, any flavor of your choice

Preheat oven to 350 degrees.

In a medium bowl, combine flour, baking powder, salt and baking soda. Set aside.

In mixing bowl, beat egg substitute and sugars. Blend in peanut butter, vanilla and melted butter. Mix well.

Gradually add dry ingredients to batter. Mix until well combined.

Spread batter in a 9 x 13 inch ungreased pan. Drop jelly by spoonfuls over batter. Swirl with knife to marbleize.

Bake for 25-30 minutes.

Cool completely on wire rack. Cut into bars.
