This is a super moist quick bread that makes a wonderful addition to any breakfast. It’s also perfect for anytime you’re looking for a quick snack during this busy holiday season.
Cherry Applesauce Quick Bread
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon apple pie spice
3/4 cup brown sugar, packed
1 cup applesauce
1/4 cup vegetable oil
3/4 cup Lucerne Best of the Egg Whites – 100% Liquid Egg White, or other egg white substitute
3 tablespoons milk
1 cup cherry pie filling
In a medium bowl combine flour, baking soda, baking powder, salt, and apple pie spice. Set aside.
In a large mixing bowl combine brown sugar, applesauce, oil, egg white substitute and milk. Mix until well blended.
Gradually add four mixture to sugar mixture. Mix until well combined.
Gently stir in cherry pie filling.
Spread batter in a greased and floured 9x5x3-inch loaf pan.
Bake at 350 degrees for 60 minutes, or until a toothpick inserted in center comes out clean.
Cool completely on wire rack before slicing. Dust with powdered sugar before serving, if desired.
