Chocolate Cherry “Surprise” Muffins

What could be better than taking a big bite into a chocolate muffin, and discovering a cherry “surprise” inside. That’s exactly what happens when you bite into these scrumptious muffins. It’s like a chocolate covered cherry – in muffin form.


Chocolate Cherry “Surprise” Muffins

1 1/2 cups flour
3/4 cups sugar
1/4 cup baking cocoa
2 1/4 teaspoons baking powder
3/4 cups low-fat plain yogurt
3/4 cups skim milk
1 teaspoon vanilla
12 tablespoons sugar-free cherry pie filling

Preheat oven to 350 degrees. Line a 12-cup muffin tin with paper liners.

In a large bowl, mix together flour, sugar, cocoa and baking powder. Stir in yogurt, milk and vanilla. Combine just until moistened.

Fill muffin cups half full with batter. Top with 1 tablespoon cherry pie filling. Cover with remaining batter.

Bake 20 to 25 minutes, or until toothpick inserted in center comes out clean.

Cool on wire rack. Sprinkle cooled muffins with powdered sugar, if desired.

  6. This looks ever so good. I tried the choc yogurt cake, with eggs, & it came out really really nice. Hvnt posted it yet, but it was brilliant! Choc & cherries sound divine in this muffin…very yummy indeed.
