These bite-sized cookies are perfect for your little goblins. I added orange food coloring to the filling to give these cookies their “Halloween” look.
You could easily make these for Christmas as well. Just add green food coloring to the filling instead of the orange.
Halloween Sandwich Cookie Bites
1/2 cup butter, softened
1 cup sugar
1/4 cup Lucerne Best of the Egg, Egg Beaters or other egg substitute (or 1 egg)
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 cup butter, softened
3 cups powdered sugar
2 tablespoons milk
2 teaspoons vanilla extract

In a large mixing bowl, beat butter, sugar, egg and vanilla until combined.
In a medium bowl, stir flour, cocoa, baking soda, baking powder and salt together. Gradually add cocoa mixture to contents of large mixing bowl. Beat until mixture forms a soft dough.
Divide dough into four quarters and roll each quarter into 1-inch thick rolls. Wrap each roll in plastic wrap and freeze for approx. 1 hour or until firm. (You can also freeze the rolls overnight and bake the next day)
When ready to bake, heat oven to 375 degrees and cut dough into 1/8 inch-thick slices. Place on ungreased cookie sheet and bake for 8 minutes. Cool completely on wire rack.
For filling – in a small bowl, beat all filling ingredients until mixture is smooth and spreadable. Spread filling on flat side of one cookie and top with another cookie. Continue until all cookies have been formed into “sandwiches”. Makes approximately 3 dozen.
