These muffins are unbelievably tasty. The applesauce really makes them moist and flavorful, and the jam hidden inside makes for a nice little added surprise when you take that first bite.
I think these muffins are best served warm, but they are just as tasty served cold – or at room temperature. If you do want to warm them up though, just pop them into the microwave for 10-15 seconds.
Jam Filled Applesauce Muffins with Streusel Topping
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon nutmeg
1/2 teaspoon salt
1/2 cup Lucerne Best of the Egg, Egg Beaters, or other egg substitute (or 2 eggs)
2/3 cup brown sugar
1 1/2 cups cinnamon applesauce (I used Naturally Preferred Organic Cinnamon Applesauce)
6 tablespoons butter, melted
1/2 cup jam
1/2 cup brown sugar
1/3 cup all-purpose flour
1/2 teaspoon cinnamon
1/4 cup butter, softened
Heat oven to 375 degrees. Grease a 12-cup muffin tin, or line with baking cup liners.
In a large bowl, combine flour, baking powder, baking soda, nutmeg, and salt.
In a medium bowl, stir together the egg subsitute (or eggs) and brown sugar. Stir in applesauce and melted butter until mixture is smooth.
Pour the apple mixture into the flour mixture and mix with spoon until combined.
Fill muffin tins 1/3 full with batter. Add 1 teaspoon jam in the middle of batter in each muffin cup.
Top each muffin cup with the rest of the batter – until cups are approximately 2/3 full.
Mix all streusel ingredients together in a small bowl, until mixture is crumbly. Sprinkle the top of each muffin with streusel mixture.
Bake for 20-25 minutes, or until light brown.
